A simple recipe for fresh handmade pasta!
- 200g 00 flour
- 2 large eggs
- Semolina (optional)
- Mix the flour and eggs together to form a dough and knead until smooth. Cover with cling film and rest for 30 minutes.
- Dust a clean worktop with flour and roll the dough out to 1-2mm thick; this is easier if you cut the dough in half and roll each piece individually – alternatively use a pasta machine if you have one!
- Dust the rolled pasta with semolina or flour to prevent sticking and cut to your desired shape.
* (I prefer to use semolina as I find it doesn’t dry the pasta out as quickly)
