A simple one pan dish packed full of fragrant fresh herbs and beautiful flaky cod fillets
Ingredients
- 2 cod fillets
- Handful of dill
- Handful of coriander
- Handful of parsley
- 2 spring onions, chopped
- 1 garlic clove
- 6 tbsp olive oil
- Juice of a lemon
- 2 tbsp water
- ½ tsp salt
- 50g pitted green olives
Instructions
- Preheat the oven to 200ºC
- Put all the ingredients apart from the cod in a blender and blend until smooth.
- Drizzle a little olive oil in a skillet and place the cod fillets skin side down. Pour the sauce over the cod and bake for 20 minutes.
- Serve warm with some side dishes like sautéed potatoes and Greek salad.
