A simple one pan dish packed full of fragrant fresh herbs and beautiful flaky cod fillets

Ingredients

  • 2 cod fillets
  • Handful of dill
  • Handful of coriander
  • Handful of parsley
  • 2 spring onions, chopped
  • 1 garlic clove
  • 6 tbsp olive oil
  • Juice of a lemon
  • 2 tbsp water
  • ½ tsp salt
  • 50g pitted green olives

Instructions

  1. Preheat the oven to 200ºC
  2. Put all the ingredients apart from the cod in a blender and blend until smooth.
  3. Drizzle a little olive oil in a skillet and place the cod fillets skin side down. Pour the sauce over the cod and bake for 20 minutes.
  4. Serve warm with some side dishes like sautéed potatoes and Greek salad.
